I used the cookbook to make this Balsamic Salmon with Strawberry Mango Salsa.

This recipe was super easy to put together and I love that it uses fresh ingredients. You can never go wrong with anything that contains Cilantro (it’s my fave!).

The tartness of the Balsamic vinegar goes nicely with the sweet taste of the salsa. I liked that the salsa wasn’t overly sweet, the jalapeños give it a little kick. Yum!

In addition to the recipes, I love that she also includes a list of essential items that she keeps stocked in her pantry and refrigerator to ensure she always has something delicious and affordable to make at home. This cookbook would be a great one to add to your collection, I love having it in mine (I will admit to having a slight cookbook addiction). I know this is one I will pull out and reference a lot.
